Costco Boneless Pork Chop Recipe

I bought a couple kilos of boneless pork chops from Costco to make an Austrian version of cordon bleu (stuffed with cheese, ham and sweet pickles), however I'm looking for something a little different for the weekdays when I have less time to cook. Normally I would revert to Japanese curry katsu, pork adobo or mince the pork in my food processor to make picadillo or keema or thinly slice for a stir fry I don't feel like shopping the green grocer for tomorrow night. I have plenty of ideas for the weekend, but I'm looking for different recommendations for an easy recipe that takes 45 minutes or less with these thick-cut behemoths. Middle Eastern, Spanish and Asian recommendations get extra credit.
