cornbread on hotplate in a pot (don't have a cast-iron skillet)

I saw the above thread and was going to post this question there but I didn't think I should bump an old thread.

I was just wondering if I could cook cornbread in a pot using a hotplate. What I would like to do is using the ingredients from the miamiherald link above but follow the cooking process from the mamaskitchen link since it is for the stovetop. I just have to have some cornbread to go with the delicious gumbo my girlfriend made yesterday!

I have attached pictures of the only pots that I have on hand to work with.

What do you think? Or ways I can make this work and turn out great?

Cook cornbread with lard for best results
