corn bread for stuffing/dressing

I've been watching cooking shows and looking at many recipes lately. Some suggest toasting the cornbread in the oven, others suggest leaving the cornbread out for a night to get it stale. What do you think works best?

How far in advance can I make the corn bread for either method?
