I'm about to start collecting some Mauviel M250 cookware items and will be buying 4-5 items in 2018.
I would prefer to have stainless steel handles on my M250 copper pots and pans, but can only seem to choose either bronze or cast electroplated iron handles.
I have heard the bronze handle will get very hot during cooking, but it's very beautiful to look at, but the heating factor might make me avoid bronze in handles.
The cast electroplated iron handles should stay pretty cool, and I use a towell anyways, but the surface of the cast iron looks a little bit on the rough side.
What are your preferences here and what have you experience with ?
