Copper pans... oh my word

I have been pursuing copper cookware for a few years. Started collecting it while living in Europe. After relocating back to the States, I finally decided to try it out. I was nervous about the tin. This site is a treasure of guidance on that topic and you all deserve some kudos for sharing so selflessly.

Anyway, I bought a few more useful pieces off of eBay, and just did some very simple sauté for the first time in thick copper. Wow. I get it now. I mean, everything was cooking in the pan...I didn’t have to stir to keep things from cooking too fast in the center or being undercooked around the perimeter. I could wander away and things kept cooking. That means they could sit there and brown properly instead of getting pushed around the pan to keep them cooking evenly...and I am comparing to some very nice thick stainless Berndes pans that I have had for years and thought were excellent. I feel awakened!

I think this is just the beginning for me. I think I am understanding why people like to cook. The right tools clear an easy path to cooking enjoyment. Thanks again everyone.
