Saw a posting elsewhere on this list that the Copper Beech has a new kitchen team from Chanticleer. When did this happen? Ate there last December and, while it was excellent, seemed to be the same, predictable, old-style elegant menu.
This veggie-packed sheet pan shakshuka is easy to prep and, equally important, an absolute breeze to clean up. It’s a great meatless weeknight meal option, and would also make for an impressive no-fuss brunch entree for a crowd.
