Last weekend I was introduced to Coon Striped Shrimp at a birthday party. They were prepared in three formats: an addition to paella, headless shrimp in shell sauteed, and dusted and deep-fried "spiders" (walking legs with carapace removed). Fresh and sweet in each preparation, I was blown away by these locally caught, wild shrimp and wondered where they'd been all my life. They're smaller than a spot prawn but similar in texture and flavor with a thinner, softer shell. The person who bought them said they cost considerably less and are from a sustainable fishery They're available from April to November in the San Francisco Bay Area. He got them from Four Star Seafood (that might only supply restaurants). http://www.fourstarseafood.com/ I've heard that they've been seen sometimes at Ranch 99. I know that I'll be looking for them to cook at home, and wanted to post here so no one else misses out.
