Cookware Performance on Induction (Part 3)

And now for something completely different.

I'd like to start off this round with a purchase I decided upon, because for a saucier, I *really* wanted the responsiveness of copper. It had been niggling at me and with the sale, and after my communication with the Falk dealer, I decided it was worth a try.

I received the Copper Core 20 cm saucier. I really like the shape for whisking delicate sauces. It is low and wide at 3" tall outside and just over 6" of floor space beneath the slight bevel edges. ATK would be pleased as they preferred the shape of the Le Creuset. It is 1.8 qt capacity and with its shape and for the amount of sauce I plan on making, this is quite enough. It is shaped a little easier to whisk than the 20 cm Atlantis saucier, although that was well enough. In fact, I kind of missed the original Silver 7 for its smaller capacity after all rather than the 22 cm, although the larger one seemed a little easier to whisk. My 3 qt saucepan lid fits perfect and I have two other glass 8" lids that will fit also. It has a pouring lip, and three small rivets, those of you that have Falk will know. I don't think there would be any kind of issue with how small they are, too. I am really impressed with the shape and its build, it is supposedly of the same mold as their copper. The SS finish is brushed on the outside and a kind of matte on the inside.

On to the moment of truth.

I kind of missed a couple of the stages because I had trouble with my camera and batteries but I will say, it was very even at 200 watts, in fact the side edges where I went up on the shortening were dripping down and everything looked even. At 400 watts, it was still even but the picture has kind of a glare on the right so you can see it better on the left side. At 600 watts is when it started to brown after a minute or so, not as quick as the Demeyere Atlantis disc saucepans. It is darker in the middle but the 1.7 cm outer perimeter from the brown did color tan and up past the bevel and I'd say did better than the clad 22 cm Atlantis saucier. A note, I did not pound the flour out well, I used the wooden spoon through a towel again, so it is a little high in spots if you can see underneath.

I don't know how you all will think of the results. No, it is not as even as the Teknika at 600 watts or even the Anolon saucier. I just wasn't pleased with the Anolon, although it was nice enough, I didn't care for its shape for one, among other qualms. With what I plan on doing in this, I don't think I'll be going very high with the sauces to scorch level or will be stirring like in custards. Yes, I thought I'd be stirring with the Atlantis and its even less unevenness but I would rather have copper in a saucier in addition to a well constructed piece.

I really wanted the down response of copper so I am a little anxious of what you all will think about this as a whole. I also think the up response will be quicker. Kaleo had mentioned it in his review on the copper core fry pan. I have had reservations about a thick aluminum disc for a saucier, and even aluminum at all. That's why I really wanted to order this and see.

Damiano, Andrew, I saw your wishful comments about Teknika on the other post. I feel bad because I will most likely return the two Teknika pots to go toward the funding of this pot.
