although i love love eating truffles, i'm so ignorant as to how to use them in my cooking...i need help. i just got back from italy with some black truffle carpaccio (not fresh, sadly...bad year, too expensive). any idea for an entree using them? i ran into one recipe (chicken w/champagne and truffles) on epicurious that seemed tasty but seemed to be a bit flawed (in technique, that is).
