My book club is meeting on Sunday and I want tilapia to be the main course (the story of the book takes place in Rwanda and tilapia is mentioned several times).
There will be 7 of us and, although I cook fish often, I have never made tilapia.
I need a recipe that is not too involved (I want to have time to speak to my guests), if possible.
Something that can be prepped in advance and then put to simmer or bake when the guest arrive would be ideal (but I'm not sure it is feasible).
