Needed something quick & easy for dinner tonight and intended to buy a few roasted chickens but alas they weren't ready and already had a line of people waiting. So, I thought to myself, "Self, fish is quick & easy" and I bought this rockfish because it looked super-fresh. Now I don't know what to do with it! Being that I've never cooked it before I did a Google search to see what "family" of fish it belongs to so I could think of possible preparations but "not a true cod" wasn't helpful at all. It looks similar to snapper. My preference would be to grill it & make a side of sauce (not tartar) or maybe a tasty marinade involving herbs? Any ideas? TIA.
