Cooking pot stickers ahead of time

Hi everyone. I enjoy making pot stickers for gatherings but would love to find a method to prepare them ahead of time. I have tried stuffing them and then freezing them, and then frying the bottoms followed by steaming. They come out okay but the filling is really juicy in not such a great way. I've tried stuffing them and putting them in the fridge until right before i have to fry them but the bottoms sog out and the filling often falls through. I always end up stuffing them and frying/steaming them right before serving and it's a drag. I am wondering if someone has an easier/proven method that doesn't require up to the minute prep. Thanks!
