As requested by Scoutmaster on the General Topics thread about maple sugar, here is a Lemon Basil Vinaigrette recipe, from The Maple Syrup Cookbook, by Ken Haedrich. Some of the other recipe titles in that book
are listed in my post on that thread. http://chowhound.chow.com/topics/911906 If anyone wants the details, ask here and I'll include them. Remember that these recipes are for syrup. The substitution rule is a half cup of maple sugar = a cup of maple syrup, but that can vary a bit based on grade of syrup, so err on the low side and taste as you go.
1/3 cup vegetable oil - can use part olive oil
1/4 cup apple cider vinegar
1/4 cup maple syrup
1 tbsp Dijon mustard
salt and pepper
1-1/2 tsp fresh basil, minced, OR 1/2 tsp dried basil
1/8 tsp finely-grated lemon zest
Mix ingredients, taste and adjust vinegar/maple amounts if necessarym refrigerate. Makes a scant cup of dressing. For creamy dressing, whisk
a half cup or more of sour cream into the finished dressing.
