As requested by Scoutmaster on the General Topics thread about maple sugar, here is a Lemon Basil Vinaigrette recipe, from The Maple Syrup Cookbook, by Ken Haedrich. Some of the other recipe titles in that book
are listed in my post on that thread. If anyone wants the details, ask here and I'll include them. Remember that these recipes are for syrup. The substitution rule is a half cup of maple sugar = a cup of maple syrup, but that can vary a bit based on grade of syrup, so err on the low side and taste as you go.


1/3 cup vegetable oil - can use part olive oil
1/4 cup apple cider vinegar
1/4 cup maple syrup
1 tbsp Dijon mustard
salt and pepper
1-1/2 tsp fresh basil, minced, OR 1/2 tsp dried basil
1/8 tsp finely-grated lemon zest

Mix ingredients, taste and adjust vinegar/maple amounts if necessarym refrigerate. Makes a scant cup of dressing. For creamy dressing, whisk
a half cup or more of sour cream into the finished dressing.
