What cooking gadgets changed your life?... Well at least your cooking?

I really love a good time saver in the kitchen. Rather than create a Zombie thread (revive a 9 or 10 yo dead thread), I thought I'd see if the hounds have any new kitchen gadgets that they just can't live without.

Personally as an avid gardener (especially chiles and tomatoes) I just love my food mill. It makes making tomato and hot sauces sooo much easier (no more seeding or peeling and makes straining a breeze). Not to mention the best mashed potatoes and I even use it for Spätzle.

My serrated melon/fruit baller I cant live without either. Great for removing tomato stems, apple and pear cores, seeds from cucumbers (for sushi) and other squashes.

My Krups coffee grinder used for spices also gets a ton of use for home made paprika and chipotle powders, curries, dry rubs, and so much more.

My Molcajete for making fresh salsas and guacamole.

And who can live without a vacuum sealer? Besides storing fresh and prepared foods, I really like to use it for marinades when I don't have a day or two.
