I'll kick us off with my Bubba's one and only way he'll eat zucchini from the garden. He will absolutely not eat it if it's prepared any other way, or if the zucchini isn't mush, or cut into half moons, or deep golden brown on all sides. He is a picky little bastard.

BUBBA'S ZUCCHINI

-1 medium zucchini, cut into 1/2" rounds and then into half moons
-1-2 tablespoons extra-virgin olive oil
-pinch of salt
-1/4 cup of chicken broth

Heat oil in a large skillet over medium heat. Add zucchini in a single layer, season lightly, and let sit without moving on one side until deeply brown. Flip over each piece of zucchini, add broth, and cover pan until zucchini is very tender. Remove lid, and continue cooking until broth has boiled off and second side of zucchini is deeply browned. Remove from heat, cool, and serve.
