So my mother has been recently diagnosed with diabetes. Not sure how severe or what type, (I don't know much about the disease yet), and I want to start cooking her some delicious meals. So far basically what I'm told is she should have a very low-cart diet, which right away is very difficult for us. Not much bread or pasta, but she loves rice, grains, noodles.
Any recommendations on where to start? Maybe a good brand of low-carb tortillas/bread or grain that I should know about?
