cooking all day and food safety

I like to cook things that tend to sit on the stove for hours - soups, beans, braises. Once it's finished, which may be a few hours before dinnertime, I never know what to do with it. Is it safe to leave it on the stove for a few hours and bring it back to a boil for dinner? Or do I have to cool it down and refrigerate it until I'm ready to serve?
