cookies or other desserts that won't wilt in the humidity

I am cooking for a big family picnic (100 - 120 people) for one day of our early August family reunion (which has now morphed into an annual four-day extravaganza). My sisters and I put on a spread at her house, with a standard menu of oxroast, sloppy joes, pulled pork, chicken salad, pasta and potato salads, cole slaw, and corn on the cob. We like cookies or other portable non-refrigerated desserts, but it is very hot and humid so the chocolate chip and oatmeal cookies I have been making are not very successful. I'm making a variety of fudges - maple walnut, cranberry pecan, tropical white chocolate, and cherry chile, but need some sort of baked goods too. I have to bake them here in Rhode Island and transport them to western PA with me.

So, any ideas about a very delicious portable cookie that will hold up to the humidity for a couple of days? I'm thinking maybe brownies and blondies? But I'd love something original too.
