Westchester Magazine is breaking the story that Chef David DiBari's The Cookery in Dobbs Ferry has added a 3% surcharge to all food sales at the popular restaurant. No word whether this new policy affects DiBari's other eatery, The Parlor. The money will go towards paying kitchen workers who are exempt from tip sharing. Sounds like a noble goal. Notable restaurateurs around the country have been experimenting with this concept in varying ways, including Danny Meyer. What do you think?
