I just finished making some delicious baked red peppers stuffed with Mexican pulled pork, poblanos, black beans, and corn; topped with a bit of scratch cheese sauce.
I've got 8 of these I'd like to freeze for later. Any ideas for a veggie to put along side this when they go into their little 2 compartment freezer containers. Don't want to repeat w/green beans, corn, etc. Would like something relatively simple that I can season, sauté barely that complements the flavor profile.
