should I do with it?
I have a cow tongue that's been sitting in Fergus Hnderson's brine all week, and tonight I plan to cook it. Once it's cooked, how long will it last in the fridge? Also, any ideas for tongue? It's a really large tongue, and I don't know that I can eat that many sandwiches. (Furthermore, I've never had tongue before and don't even know if I like tongue sandwiches.) Can I freeze it?
