"Cooked" Sushi Rolls - SGV-area

Going out to dinner tomorrow night with a rather inexperienced (and timid) diner - finally have him to the point where he's eating with chopsticks, has stopped ordering General's Chicken every time we go for Chinese, and he actually ate his first Pho the other night.

I've taken him for sushi before, with very mixed results - he's fine with the basics (teriyaki, miso, tempura so long as he can identify the vegetables, etc.) and will eat California rolls, finally, but anything "raw" seems to be a firm limit (at least at this point). So I'm thinking about exposing him to some of the "cooked" rolls (shrimp tempura rolls, BSC, dynamite, etc. - basically cooked "stuff" on top of California rolls) - it'll get him to try some new seafood/new prep. and maybe get him more curious about the non-cooked options.

But where should we go?
