Whether raw or cooked, I like my fish like my fish oily (salmon, yellowtail) or moist (Chilean sea bass). But I'm at a loss for other types of fish (which are cooked).
This past weekend, I ordered Pacific ono as recommended by the waiter. I asked for it grilled and it came back exceedingly dry; I had to drink water to make it go down. My husband insisted that it go back (I hate returning food). The waiter came back saying that ono is typically dry so I ordered halibut instead.
Is ono a dry fish? Regardless of fish, isn't it possible to cook any fish so it remains moist?
