Had a duck thawed, had to cook, didn't feel like screwing with a lot of prep, so I just salted it and threw it in the slow cooker for 6 hours with nothing else. I didn't even take the fat from the neck or the wings off.
None of my cookbooks give me any ideas; all the duck recipes depend on a lot of herbs and/or spices to cook it in. My go-to has always been crispy duck cooked with ginger, cloves, anise, cinnamon and green onions. Cool it, dry it, then flash fry it in a small wok.
But now I have a quart of drippings with an inch of fat on top and a perfectly cooked, melt in your mouth duck but don't have any recipes or ideas. Have a headache, can't think!
Does anyone have a duck soup or duck crepe recipe? I have celiac disease so have to eat gluten-free but I can figure out substitutes for standard recipes. Just need some ideas. Help!!
