Thai Food is the cookbook I keep going back to - I like the amount of detailed information it provides, the separate sections on the cooking methods/ingredients, the history section and especially the fact that almost every recipe has a useful introduction. Both the depth, detail and range of this book is what makes it a classic for me.
I've got a number of cookbooks now, but find that none of them match the quality of Thompson's book. I recently bought the India Cookbook (published by Phaidon) and found it to be a huge disappointment - just a selection of recipes,with no background of food within Indian society, very limited section on ingredients and cooking methods.
I'm hoping to get hear from you on cookbooks that you keep going back to - that balance the background information with a good selection of recipes - Thai Food and The Art of Mexican Cooking would be good reference points for me.
No cuisine in particular - Any recommendations ?
