I've been looking into cooking some of these little guy's for a couple of weeks. Sand Dabs are a member of the flounder family. Flounder are usually filleted with the skin removed, but as I understand it the Sand Dabs are too small for that so they are cooked skin, bones and all (I guess the head is removed) and then the bones just come right out as you eat them.
I can get Sand Dabs at either Taylor's Market or Corti Bros. but they are special order. Guess I'll have to have a party. Corti says they are frozen and I'll bet that's about the only way to get them here.
How do you cook 'em? What do you serve 'em with? Sauces? How much difference between Sand Dabs and Flounder?
