My menu looks like this as of right now:
seafood salad (calamari and shrimp, this always goes over well)
olives, two varities of cheese, and good bread
linguine and clam sauce (red clam sauce, but making a portion of white clam sauce for one person who can't eat tomatoes)
eggplant parm (my mom is famous for this)
baked red snapper (prepared simply, with herbs, lemon and garlic)
seared scallops with a butter, wine and herb sauce (haven't decided which herbs yet)
some kind of side dish, possibly potato croquettes because everyone loves them, plus I can make them in advance and reheat while the snapper is cooking
a big salad, which my grandmother will make.
dessert I'm not worried about, someone is bringing pastries, someone else is bringing cookies, and someone else is making pie.
I love cooking Christmas eve meals and keeping the tradition alive!
