I used my new convection oven today for the first time. It is a "true convection" oven with an extra element at the fan. While using convection bake I was surprised to hear the fan peridically going on and off. In the convection roast mode the fan stayed on continually. Should the fan be going on and off and what it the reason for the difference in the bake and roast modes?
