I would like to try making other confits with my duck fat and would appreciate suggestions and tips. I have seen chicken confit on restaurant menus so I assume I can confit other poultry. Do I treat chicken exactly as I would duck? What about garlic and onions and other vegetables? Meats? Fish?

Also wondering how long can I keep reusing duck fat. I keep it in the freezer. Many thanks.
