So, I'm taking my first shot at making confit today, and I have a couple of questions. After you've eaten the duck, can you reuse the fat you've been keeping it in to make another round of confit? How long can you keep the fat? Are there arguments for or against storing it in the freezer? Any advice on this is welcome.
