How to concentrate maple flavor without the sugar?

Aurum | Apr 12, 2018 11:40 AM

So I was trying this little thing ( http://www.foodnetwork.ca/recipe/spic... ) for the first time, and while the result is interesting (although not for everyone), it made me realize the serious potential of the star anise + maple combo.

The problem is, I added a bit too much maple syrup to my batch of iced tea. The sweetness ended up being way too much for me, which is saying something considering my sweet tooth, but I noticed that the presence of the maple was almost perfect. I say almost, because it wasn't exactly strong enough yet.

So what I'm looking for is a way to turn maple syrup into something that has all the concentrated taste and none (or close to none) of the sugar. I know there's maple extract, but for certain reasons I can't go out as much as I'd like. All I seem to find is a way to do the opposite - boil or freeze the water away to keep only the sugar, so I'd really appreciate it if anyone had an idea and would like to share it. Thanks!
