any concensus on 12-bones? (asheville, nc)

about 6 weeks ago i posted about 12-bones, saying that asheville finally had some decent q (see link below). given their hours, it's difficult for me to get there, but i was able to stop in a couple of days ago. sad to say, but the second visit didn't live up to the first.

i had the chipotle ribs again, but this time they were overcooked. i'm guessing they smoke everything ahead, then slather on the sauce when the order is placed and toss it on the grill to reheat. not my favored way of doing it (i prefer my ribs unsauced), and not the friendliest to the ribs either.

has anyone else noticed any inconsistency? has anyone tried ordering them unsauced?

my sides this time were bacon-cheddar mashed potatoes (gummy from being held too long, and the bacon-cheddar didn't come through), and the jalapeno-cheese grits (very tasty).

also tried a variety of sauces. habanero had little up-front heat, but a slight lingering burn. jalapeno was very tasty, although heavier on tomatillo than jalapeno. i really liked the mustard sauce; good mustard flavor, not too thick like commercial sauces, but enough to coat and not run off. the tomato-based had a nice flavor. the vinegar was more vingear than anything else (no pepper, etc. - maybe i didn't shake the dispenser enough).

this trip wasn't bad, but it wasn't as good as the first. any other experiences out there?
