And Now For Something Completely Different-Truffle Stuffed Ham!

I was in Garden of Eden on 14th Street getting some yummies for a quiet New Year's Eve (pate de foie gras de canard, pate compagne, rosette de lyon) when I saw a sign for "cooked ham with skin stuffed with truffles" from San Marino Italy. I can't remember the Italian name-"trufficato(something)". It was $40 a pound but I had to try it. It was an excellent giant skin on prosciutto cotto (cooked) studded with huge white truffles. While I prefer prosciutto crudo, of course, to cotto, the rather large truffle in the center which was sliced paper thin with each slice of ham really made it special. I'm going back for more.
