As l did with the fish sauces, l am going to compare five California marmalades. Unlike the sauces, this comparison was done by me alone, thus one sided to my taste but what can you do,
The marmalades came from three sources, The Good Stuff in Sacramento either bought from them or bought from Corti Bros. Also from Robert Lambert in Marin, and a homemade by me Meyer's lemon made with honey that was made with fruit from Marin Farmer's Market and buckwheat honey.
The five are :
1 The Good Stuff Meyer's lemon and honey marmalade 6.4 oz $ 15 with shipping
2 The Good Stuff Citron marmalade , Corti 11 oz $ 11 with shipping,
3 The Good Stuff Five Citrus Marmalade , Corti 11 oz $ 11 with shipping,
4 Robert Lambert Five Grapefruit Marmalade 8 oz $ 19 with shipping
5 Meyer's Lemon/honey HOMEMADE ---------

There are so many differences between the five that l might miss a few of them but will try to list them.
First: The textures are two types, the very firm marmalade seen in # 3,4,5
The runnier style seen in # 1,2
Second: The bitterness, usually associated with more pith and less boiling of the fruit
seen in # 3,5
Less bitterness in # 4
Sweetish in # 1,2
Third: Amount of fruit huge with much rind # 3,5
Medium #1,2,4
Fourth: The chew of the rind, my most important category for me, # 3,5, very chewy
The others less so.
Fifth and lastly: The texture of the liquidy part, can be clearish or more opaque and granular
seemingly dependent on the type of sugar used as well as the cooking time.

Now the ratings by me alone:
1/ My homemade Honey Meyer's lemon was the bomb, quite bitter and VERY chewy, just loved it. it may be the marmalade of my dreams.
2/ The 5 citrus, including Blood Orange, Bergamot, Citron, Chinotto, and Meyer's Lemon.
Just outstanding, better than any from the British Isles l have ever had, and have had 30-40 of those. The lightness of the sugar and the chewiness of the fruit made it the best commercial one ever eaten. The current vintage is their second and seemingly identical to the last year's vintage.
3/ The Robert Lambert was filled with fruit and nice and less sweet but the 'juice' was granular and tasted less pure, not in ingredients but in the whole package.
4/The citron made with fruit from Darryl Corti's orchard was very interesting but too runny for me.
5/The Commercial Meyer's lemon was very runny and way too sweet for me, but still a well made product.

Waiting to see response to this post. Got little response to fish sauce post and hope more on this post. Is the reason l stopped posting on Chowhound, seems far, far less long discussions anymore.
