commercial steamer help!

I am a volunteer in our church kitchen, which was recently remodeled. We now have a commercial steamer, which we are told is very useful, especially for quick cooking and for reheating frozen casseroles. However, we have not been given much other information. I need help! For a big event, we may serve 50 - 100 people. We also have 2 convection ovens and a large "warmer" to hold food until ready to serve or to warm up rolls or sandwiches. I would like to use the steamer effectively, for main dishes, side dishes, and desserts. Any suggestions and recipes are gratefully welcomed. Anne
