In several posts over the last few years, I have touted the best tri-tip I have ever had...came from a guy who has done catering for a long time and had a couple of restaurants in Los Alamitos and Norwalk (Red Oak BB). He had gotten out of the restaurant biz to do catering full time but the bug has bitten him again and he is opening a small restaurant as part of his catering biz in Upland. They just passed the health dept inspection and should be open soon. More details to follow once I get out to a visit...but I think it is gonna be worth checking out.
I can make some preety darn good tri-tip, but the stuff he cranks out just blows me away. 4 weeks ago I had him do 20 lbs for my daughter's Baptism party, and I never had so many "how did you make that" or "where did you get that" comments in my life. I was kinda bummed that there were no leftovers!
