Columbus Hounds Seek Seattle Recs

My girl and I love good food and would greatly appreciate some input so that we might get a true taste of what Seattle offers when we visit. We'd like recommendations along any (or all) of the following lines:

1) Seafood. What's in season? Who does it best?
2) Chinese. All varieties, but great dim sum sure would hit the spot!
3) Local fare. Which restaurant(s) best capture the local culture and flavor (e.g. I'd say Rigsby's or M for Columbus)?
4) Adventurous. We love all things chow, but the restaurants in Columbus rarely take one outside their comfort zone. Where can we go to give our taste buds a little jolt of excitement?

We'll be downtown off Denny Way near I-5, so anything withing cab distance is fair game. Also, price is no object. From greasy spoon to the most elegant of affairs, all suggestions will be received with much gratitude.
