Colonia Publica (Fideo Pop-Up by Chef Ricardo Diaz)

Read about this place in the LAT, and had a chance to try it this weekend.

Never had fideos before, and if you're a n00b like me fideos are basically sort of a Spanish version of ramen (at least that's my alibi and I'm sticking to it).

At Colonia Publica, the fideos come served in a bowl with pork and chicken broth simmered for what I am told is over 12 hours.

You get a buffet-type selection of toppings. Had mine with fried tortillas, cilantro chutney, egg drop, corn and chorizo.

Good eating. All for $6 a bowl to start (with toppings mostly in the .25 to .50 range, with the exception of the sausage and the fried pork rinds).
