Cold Thai Sausage Salad

When I was a kid there was a fabulous Thai restaurant in Nyack, NY called "The King and I" which has since changed hands a few times and has really gone down hill.

But in the old days of glory, they had a weekend special that was a cold Thai sausage salad... fairly simple but astoundingly delicious. It was basically grilled pork sausages (mostly fat) and various different kinds of peppers (mostly volcanic chilis) in a light fermented fish, lime, and coconut sauce. It was probably the hottest thing I've ever eaten, but also probably the most delicious. I think I've been able to almost recreate in my own kitchen. . . but I'm recreating it from childhood memory. Does anyone know somewhere I can find a restaurant the really knows how to prepare this? Does it have a name?
