Hi everyone. I'm planning to cold smoke a piece of meat but I don't really want to use wood chips to do so. I was just wondering if it is possible to cold smoke using charcoal. Maybe heat the charcoal like usual then douse it with cold water then leave the meat in the barbecue for a few minutes? I'm not looking for a strong smoke flavor just a subtle hint. Forgive me if I'm not making any sense, any ideas and/or suggestions would be appreciated.
