One of my favorite restaurant has this grilled new york strip with a habanero cream sauce. One of the tricks I found out they use, is that the steak has coffee added to its spice rub. Recently got a very nice bag of coffee from Vietnam that has some Cherry wood mixed in, so thought I would try to recreate the steak at home, or it may make a good rub for something like a pork loin roast.
Wondering if you have any good recipes/tips on how much coffee to use, or how to minimize the bitterness of the grinds.
