I've got a delivery of fresh-off-the-boat cod I'll be picking up from my CSF program this afternoon. It's 94 degrees in Boston and we have no AC. I'm looking for a good recipe for tonight's dinner that won't heat the kitchen too much, features cod as the centerpoint, and perhaps has some artichokes in there too. I'm not opposed to using the stove, I just don't want to have to hover over it while the cooking happens (so, risotto's out, for example).
Any great ideas?
