I just made a banana bread with coconut flakes from the bulk bin of the supermarket (Fairway) and I was so disappointed.
The coconut was very dry, like sawdust, and the taste was not too far from what I imagine sawdust tastes like.
So my wonderful bread with overripe bananas, toasted pecans and rum-soaked raisins had this awful gritty flakes...
Is it easy to make your own coconut flakes?
Or is there a place in Manhattan where I can get nice coconut flakes that don't taste like shredded paper?
