Y'all know how it is, when the larder's bare and you use what's in the cupboards. I was determined to make cornbread muffins, and all I had was the corn meal, coconut flour, and egg and some milk. Delicious combination. It's not so great with Split Pea Soup. But, since I love Caribbean cuisine, I think coconut muffins would be wonderful with black bean soup and pulled pork. I might substitute the milk for mango juice since they have approx. the same viscosity. What do you think?
