Does anyone have a recipe for plain old, high-quality chocolate ice cream? Surprisingly, recipes that don't use cocoa powder are really scant. I'd like one that has a good yolk/custard base, that uses high-quality chocolate.
I could make one up pretty easily. What I don't know is what kind of chocolate to use. Semi-sweet? unsweetened? Milk chocolate? And the next questions is: for each of these options, how much sugar would be appropriate for a recipe?
