Sub cocoa butter for butter in baking

I'm attempting to create a baked snack bar using shredded coconut. No carbs so Im sweetening it with Erythritol.
I started with coconut, chocolate, protein powder, butter, water & cream.
I'd like to eliminate the chocolate and replace it and butter with cocoa butter.
It doesnt seem to be working so far.
Any suggestions...
