Coating that falls off (sometimes)

Whether I'm making fried chicken or a chicken fried steak, my coating does not always stay in place. Sometimes it comes partially off during frying, and sometimes it comes off during eating.
This is what I am currently doing. Dip chicken or steak in a seasoned flour. Dip floured piece in egg wash and then (again) in the seasoned flour. from there into the hot oil.

Any tips to get a coating that sticks like glue ? thank you.
