Over the Fourth of July, a friend and his wife roasted whole butternut squash in embers until the skin was completely charred and the fleshwas soft enough to scoop out with a soup spoon. They seved it room temp with soft cheese. It sounds heavenly to me and asked them for a recipe/method and they said they were inspired by an episode of Chef's Table on Netflix. Just started watching the series myself. I don't have an outdoor area to roast but have a sizable fireplace with a large paella pan and grill that fit in it. (I also burn almond wood which seems to burn hot and clean if that makes a difference either way) Has anyone tried this? Thoughts, opnions, and tips are greatly appreciated. Thanks in advance!
