When I was 14 I worked at this Chinese restaurant on I 20 west of Marengo. The year was 1977. I lied about my age to get paid $1.65/hr. The owners were Jimmy & Mae Moy. Tina & Sally were the girls brought from China to work in the restaurant.
The eggrolls were the best I ever tasted.
I helped make them once. The filling included baby shrimp, bbq pork, water chestnuts, bok choy, etc. Peanut butter was used as a binder.
I believe the proteins and peanut butter are what makes these Egg Rolls better than any I've had in the many places I've lived.
When Clearview closed, the head chef opened his own restaurant in Harvard. The day before my scheduled departures I would buy dozens of their egg rolls, uncooked & frozen to bring home
5 years ago on my last trip home I found the restaurant in Harvard had closed.
So my question is....does anyone have the recipe for these egg rolls from heaven?
