Cleanup advice / solution: Barbecue / BBQ

I'm prepared for you to roll your eyes at this question already.

I don't have a smoker but I have a really good solution where I smoke in my gas grill in a contraption I put together from a couple of roasting pans with holes drilled in the top pan. I set it above the bottom pan and fill that pan with water/aromatics. Fast forward to the end of the process: I pull the meat out of the pan, shut down the grill, have a great dinner, everything is perfect.

But then comes cleanup and I have this mess (and it's especially bad if I let it sit to the next day which I frequently do). I've got a tub of water and congealed or liquidized fat. I can't put it down the sink because it'll clog pipes. I can't throw it in trash can because it's too liquidy. I can pour it into the gutter and let nature take its course but I look like a redneck.

So.. ideas?
